Ingredients
  

  • 1 large potato
  • 1 large carrot
  • 1 eggplant
  • 1 plantain
  • 1 cup of string beans
  • 6-8 pieces of okra
  • 1 tomato
  • 1 onion, sliced
  • 3 green chillies, slit
  • 4 cloves garlic, minced
  • 1 tsp turmeric
  • 1⁄2 tsp red chili powder
  • 2 stalks of curry leaves
  • 2 tbsps coconut oil
  • Salt to taste
  • Tamarind paste, as needed
  • 1 cup plain yogurt

Optional Vegetables (1 Cup of Each):

  • 1 snake gourd
  • 1 drumstick
  • 1 chembu (colocasia, taro)
  • 1 ash gourd
  • 1 mango *

Masala Ingredients:

  • 1-1 1⁄2 cups coconut, shredded
  • 1 tsp cumin seed
  • 2 small green chillies

Instructions
 

  • Cut all vegetables to approximately 2” long then wash and drain the vegetables.
  • In a large pan, add all the sliced vegetables, onion, turmeric, red chili powder, curry leaves, and green chillies.
  • Add 2 to 2 1⁄2 cups of water.
  • Add 1 tablespoon salt to the water and cook the vegetables while on medium heat.
  • Grind masala ingredients into a coarse mixture.
  • Add masala mixture to the cooked vegetable mix.
  • Add the yogurt.
  • Bring it to a boil.
  • Taste for salt and add 2 tablespoons of coconut oil.
  • Mix well.

Notes

*If mango is used as one of the vegetables, tamarind may not be necessary and yogurt should be reduced to ½ cup.
