Beans Thoran

(Beans Stir-Fry)

  • 2 cups beans, cut in small pieces
  • 2 tablespoons coconut oil *
  • ½ teaspoon mustard seed
  • 1 tablespoon urad dal
  • 2 whole red chilies split in half
  • 1 medium onion, diced
  • 2 stalks of curry leaves, optional
  • ¾ cup coconut, grated
  • 2 cloves of garlic
  • 2 green chillies
  • ¼ teaspoon turmeric
  • ½ teaspoon cumin
  • 1 teaspoon water
  • ¾ teaspoon salt, or as needed


  • In a food processor, coarsely grind the coconut, green chilies, turmeric, cumin, and garlic – for 3 to 4 pulses. Set aside.
  • Add 2 tablespoons of oil to a pan.
  • Once the oil is hot, add mustard seeds.
  • When the mustard seeds pop, turn down the heat and add urad dhal.
  • When the urad dhal is slightly browned, add the whole chilies (broken in half), the diced onions and ½ teaspoon salt.
  • When the onions are brown or slightly translucent, add curry leaves.
  • Add the cut beans and mix well for about 2-3 minutes.
  • Sprinkle water over beans.
  • Add the coconut mix that was set aside.
  • Cover and cook on low heat for 2-3 minutes.
  • Taste for salt and add ¼ teaspoon, if needed.



*Use oil of your choice
**Cooking time varies with the type of beans used. Some beans cook quicker than others.
