Biryani Masala

Ingredients
  

  • 2 1" cinnamon sticks, broken in pieces
  • 4 anise seed
  • 1 nutmeg
  • 2 mace
  • 2 tbsp. fennel seeds
  • 20 cardamom
  • 2 black cardamom
  • 1/2 tbsp. cloves
  • 1 tsp cumin
  • 2 tbsp. shahi jeera
  • 1/2 tbsp. white pepper
  • 2 tbsp. coriander seeds
  • 3 bay leaves

Instructions
 

  • Roast the ingredients uniformly set aside.
    1st roast - Cinnamon sticks, anise seeds, mase, black cardamom, nutmeg and bay leaves
    2nd roast - Fennel seeds, cardamom, cloves, cumin, shahi jeera, white pepper, and coriander seeds.
  • Cool for 10 minutes on a plate.
  • Grind into a powder.
  • Store in a tight container.
