Cabbage Thoran (Regular and with Carrots)

Ingredients
  

CABBAGE THORAN WITH CARROTS

  • 1 cup cabbage, shredded
  • 1 carrot, shredded
  • 1 medium-sized onion, sliced
  • 1 tablespoon ginger, minced
  • 5-6 cloves garlic, minced
  • 2 green chillies, cut in half and slit
  • 2 whole red chillies
  • 1 cup coconut, grated
  • 1 teaspoon turmeric
  • 2 stalks of curry leaves
  • 1 teaspoon cumin seed
  • 1 tablespoon urad dal or brown rice *
  • 1 teaspoon of mustard seed
  • 1 teaspoon cumin seed
  • 2 tablespoon of coconut oil **
  • Salt To taste

CABBAGE THORAN

  • 2 cups cabbage, shredded
  • 1 medium-sized onion, sliced
  • 1 tbsp ginger, minced
  • 5-6 cloves garlic, minced
  • 2 green chilies, cut in half and slit
  • 1 cup coconut, grated
  • 1 tsp turmeric
  • 2 stalks of curry leaves
  • 1 tsp cumin seeds
  • 1 tbsp urad dal (or brown rice), uncooked
  • 1 tsp mustard seeds
  • 2 tbsp coconut (or vegetable oil)
  • salt to taste

Instructions
 

  • Cabbage Thoran
  • Combine shredded coconut, turmeric, garlic, green chillies, onion, and ginger in a food processor.
  • Coarsely grind the mixture – 2 pulses is adequate.
  • In a pan, add oil.
  • When the oil is hot, add mustard seeds.
  • When the mustard seeds pop, add cumin seed, urad dal (or brown rice), and let it brown slightly.
  • Add curry leaves and coconut mixture to the pan and mix well.
  • Add cabbage and combine with the coconut mixture.
  • Add salt to taste.
  • Cover and cook for 3 to 5 minutes on medium heat.
  • Stir in between. Do NOT add water.
  • Turn off heat and mix well.
  • Cabbage Thoran with carrots
  • In a pan, add oil.
  • When the oil is hot, add mustard seed.
  • When the mustard seeds pop, add cumin seed, and urad dhal (or brown rice). Let it brown lightly.
  • Add ginger, onion, garlic, green chilis, turmeric, whole red chilis, and curry leaves.
  • Once the onions are lightly browned, add grated coconut to the pan and mix it well.
  • Add salt to taste.
  • Add carrot and cook for a minute.
  • Add cabbage, mix well, and cook for another 3 to 5 minutes on medium heat with lid on. DO NOT add water.
  • Turn off heat and mix well.

This dish goes well with Nan, Chapatti, Rice, Kanji, etc.
*Optional.
