Chicken Roast

Ingredients
  

  • 2 lbs. Chicken (bone-in or boneless) cut into bite-size pieces bone or boneless
  • 1 tbsp vinegar
  • 1 tbsp salt

For Marinade:

  • ½ tsp turmeric
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp kashmiri chili
  • 1 tsp garam masala

For Roasting:

  • 1⁄2 cup coconut oil *
  • 2 tbsps ginger, diced
  • 2 tbsps garlic, diced
  • 4 shallots, sliced
  • 3 medium onions, sliced
  • 1 tbsp salt
  • 2 green chilies
  • 3 stalks of curry leaves
  • 1 large tomato, minced

Dry Spices:

  • 2 tsp kashmiri chili
  • 2 tbsp coriander
  • 1⁄2 tsp black pepper
  • 2 tsp garam masala
  • 1⁄2 tsp fennel seed powder
  • 1⁄2 tsp turmeric

Instructions
 

  • Clean and wash the cut pieces with vinegar and salt mixture.
  • Rinse well and set aside.
  • Marinate the chicken with the dry spices and set aside.
  • In a pan, add oil.
  • When the oil is hot, add the marinated chicken pieces.
  • Cook on medium heat.
  • When one side is cooked, turn over to the other side and cook well.
  • Once the chicken is cooked (don’t overcook), remove from oil and set aside.
  • Remove the sediments from the oil by straining.
  • In a pan, use the same oil once strained.
  • When hot, add ginger, garlic, shallots, and sauté for 2 minutes.
  • Add the onions and one teaspoon of salt.
  • Mix well and add green chilies and curry leaves.
  • Sauté well.
  • Once the onions are slightly brown, reduce heat and add the dry spices.
  • Sauté well until all ingredients are well incorporated.
  • Add the tomatoes and cook on medium heat.
  • Mix well.
  • Cook with the lid closed for about 2 minutes.
  • Once the tomatoes are well cooked and soft, add the cooked chicken pieces.
  • Add a 1⁄4 -1⁄2 cup of hot water and mix the chicken into the spices.
  • Cook for about 5-6 minutes. Mix well.
  • Once the spices are well coated on the chicken, taste for salt.
  • Turn off the heat.
  • The chicken roast is ready.
