Chili Chicken

Ingredients
  

  • 2 pounds of boneless chicken, cut into bite-sized pieces*
  • 1-1 1⁄2 cup of oil, for frying

For Cleaning:

  • 1 tbsp vinegar
  • 1 tbsp salt

For Marinating:

  • 1 tsp chili powder
  • 1⁄2 tsp turmeric
  • 1⁄2 tsp black pepper
  • 1⁄2 tsp of salt
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1 1⁄2 tsp all-purpose powder
  • 1 tbsp corn starch
  • 1 egg

For Preparation:

  • 2 tbsps. oil
  • 1⁄2 tsp fennel seed
  • 1 tbsp ginger, minced
  • 5 cloves garlic, minced
  • 1-2 green chillies, sliced
  • 1⁄2 tsp pepper flakes
  • 1⁄2 tsp black pepper
  • 1 large onion, cubed
  • 1 cup green bell pepper, cubed
  • 1 cup red bell pepper, cubed
  • 1 cup yellow bell pepper, cubed
  • 1 tbsp corn starch **
  • 2 tbsps soy sauce
  • 1 cup hot and sweet sauce ***

Instructions
 

  • In a bowl, add water, vinegar and salt to chicken pieces. Mix well.
  • Rinse well and set aside.

For Marinating:

  • Marinate chicken for 2-4 hours.
  • Fry the chicken - set aside.

For Preparation:

  • In a pan, add oil.
  • When the oil is hot, add fennel seed.
  • Add ginger, garlic, and green chili(s).
  • Stir well for a minute.
  • Add onions and bell peppers. Sauté well.
  • Add the soy sauce and hot and sour sauce.
  • Mix well and add the fried chicken.
  • Cook for about 5 -7 minutes.
  • Garnish with chopped scallions.****

Notes

Adjust the ingredients according to availability and taste.
*Chicken thighs or chicken breasts can be used.
**In 2 tablespoons of water, mix 1 tablespoon of cornstarch and add it to the chicken mix in order to thicken the sauce.
***Adjust the hot and sweet sauce according to its intensity. To reduce the spiciness, you can add tomato sauce or ketchup.
