Dates Pickle

Ingredients
  

  • 250 grams (1 cup) of pitted dates
  • 2 tablespoon ginger, minced
  • 2 tablespoon garlic, minced
  • 2 green chili, minced
  • 2 curry leaf stalk
  • 1 tablespoon Kashmiri chili fowder
  • ½ teaspoon Fenugreek powder, roasted
  • 1 teaspoon mustard seed
  • ½ teaspoon turmeric
  • ½ teaspoon Asafoetida
  • 2 teaspoon brown sugar or jaggery
  • 1 teaspoon tamarind concentrate
  • 2 ½ cup hot water
  • ¼ cup sesame oil *
  • 2 ½ teaspoon salt, then as needed
  • 1 tablespoon vinegar

Instructions
 

  • Cut pitted dates into 4-5 slices each.
  • Take ½ cup hot water and mix 1 teaspoon tamarind concentrate and mix well and set aside.
  • Heat up ¼ cup of sesame oil in a frying pan. Once oil is hot, add 1 teaspoon mustard seed. Be careful, they may pop up.
  • When popping slows down, add 2 tablespoon ginger, 2 tablespoon garlic and 2 green chilis, curry leaves to the pan and mix until slightly brown.
  • Turn heat to low when adding dry spices so it doesn’t burn. Add ½ teaspoon turmeric, 1 tablespoon Kashmiri chili powder, ½ teaspoon roasted Fenugreek powder, ½ teaspoon Asafoetida. Mix well and sauté for 1-2 mins on low heat, until raw smell disappears.
  • Increase the heat and add dates to the pan, mix and sauté for ~ 2 mins.
  • Add the ½ cup tamarind water.
  • Add 2 teaspoon brown sugar or jaggery to the pan, mix well, then add 2 cups of hot water, and 2 teaspoon of salt.
  • Mix and add 1 tablespoon of vinegar, which helps act as a preservative.
  • Let cook on low to medium heat, stirring in between for about 8 minutes. The mixture in the pan will start to come to a boil and thicken. Around 4 minutes, check for salt according to your taste, we added an additional ½ teaspoon of salt, mixed well and continued to cook for 4 minutes (total 8 minutes).
  • Date pickle is ready to eat!
  • Once cooled, date pickle can be stored in an airtight glass container in the refrigerator.

*Any oil can be used but sesame oil gives more flavor.
