Egg Fried Rice

Ingredients
  

Step 1:

  • 1 cup basmati Rice, soaked in water for 20 to 30 minutes*

Step 2:

  • 2 eggs
  • 2 tablespoons oil
  • ½ tablespoon ginger, minced
  • ½ tablespoon garlic, minced
  • ¼ cup onion, minced
  • 1 green chili, minced
  • ¼ cup carrot, cut into small pieces
  • ¼ cup string beans, cut into small pieces
  • ¼ cup green bell pepper, cut into small pieces
  • ¼ cup of the white portion of green onions, cut in small pieces
  • ¼ cup of the green portion of green onions, cut into small pieces for garnish

Step 3:

  • 1 tablespoon chili sauce
  • 1 tablespoon soy sauce

Instructions
 

Step 1:

  • Boil 6 cups of water.
  • Add ½ teaspoon of salt.
  • Add the rice to the boiling water.
  • Cook for about 5 minutes.
  • Drain and set aside to cool.

Step 2:

  • Scramble 2 eggs in a pan with 1 tablespoon of oil.
  • Sprinkle a pinch of salt and ¼ teaspoon black pepper.
  • Set aside.
  • In a pot, add 2 tablespoons of oil.
  • When hot, add ginger, garlic, green chili and onion.
  • Sauté for 2 minutes.
  • Turn heat high and add the vegetables.
  • Mix well. Don’t overcook.

Step 3:

  • Add soy sauce and chili sauce.
  • Add the rice and scrambled eggs.
  • Mix well and taste for salt.
  • Egg Fried Rice is ready to serve. Enjoy!
