Ethakka Appam

  • 3 plantains, ripe
  • 1 cup all-purpose flour
  • 1⁄4 cup rice flour
  • 3 tbsps sugar
  • A pinch of baking powder
  • 1⁄2 tsp cardamom
  • 2 cups of oil, or as needed for deep frying
  • 1⁄4 tsp salt
  • 1⁄4 tsp turmeric
  • 3⁄4 cup water or more, as needed


  • Cut plantains down the middle and split them into halves or three pieces.
  • Mix the all-purpose powder, rice flour, sugar, turmeric, cardamom, and salt until well incorporated.
  • Make a batter by adding 3⁄4 cup of water. The batter should be the consistency of a pancake batter or a dosha batter.
  • Set aside for about 5-10 minutes.
  • You can add more sugar if needed.
  • Heat 2 cups of oil in a pan.
  • Dip the plantains in the batter.
  • Fry them until golden brown.
  • Ethakka Appam is ready to serve. Enjoy!
