Fish Curry

(With Mango and Coconut)

Ingredients
  

Step 1:

  • 1-1⁄4 cup of coconut, grated
  • 1-1⁄2 tbsp. of chili powder
  • 1⁄2 tsp of black pepper powder
  • 1 tbsp of coriander powder
  • 1⁄2 tbsp of roasted fenugreek powder
  • 1⁄2 cup of water to grind
  • 1⁄2 tsp turmeric

Step 2:

  • 1-1⁄2 lbs of King Fish, cut and washed
  • 1 medium mango (about 1⁄2 lb), cut length-wise
  • 2 tbsp of coconut oil *
  • 2 tbsp ginger, minced
  • 1 tbsp garlic, minced
  • 3 green chilies, split and cut in half
  • 1 stalk of curry leaves
  • 1 medium onion, sliced (or 10 pearl onions, sliced)
  • Salt, as needed

For Tempering:

  • 1-1⁄2 tbsp coconut oil
  • 1⁄2 tsp mustard seeds
  • 2 pearl onions, minced
  • 1⁄4 tsp fenugreek powder
  • 1 stalk curry leaves
  • 2 small dry chilies

Instructions
 

Step 1:

  • In 1⁄2 cup of water, make a fine paste of the Step 1 ingredients.
  • Set aside.

Step 2:

  • In a pan, add 2 tablespoons of coconut oil.
  • When hot, add the ginger and garlic.
  • Sauté until slightly brown - about a minute.
  • Add onion, green chilies, curry leaves and a teaspoon of salt.
  • Sauté for about 2 minutes.
  • Add the coconut paste from Step 1 and sauté for 2 minutes.
  • Add 2- 2 1⁄2 cups of water and mix well.
  • Add salt to taste
  • At the first boil, add the mango pieces.
  • When it boils again, add the fish.
  • Stir well
  • Cook on medium heat for 10-15 minutes.

For Tempering:

  • In a small frying pan, add the coconut oil.
  • When hot, add mustard seeds.
  • When the mustard seeds pop, add the minced pearl onions and sauté for a minute.
  • Add dry chilies, curry leaves and the fenugreek
  • Mix well and add to the fish curry.
  • Fish Curry is ready to serve.

Fish curry with Mango and Coconut goes well with rice, chapati, nan etc.
*Any oil will do - coconut oil provides its distinct taste.
