Fried Fish

Ingredients
  

  • 1 pound of Kingfish, cut in 1⁄2 inch thickness*

Clean the Fish:

  • 1 tbsp lemon juice
  • 1 tbsp salt

For Marinade:

  • 1 tbsp. chili powder
  • 1 tsp black pepper powder
  • 1⁄2 tsp turmeric
  • 1 inch piece of ginger (1 tablespoon), sliced
  • 1 tbsp. garlic, sliced
  • 1-1⁄2 tsp salt
  • 1 tbsp lemon juice
  • 1-2 tbsps. of water
  • 1 tbsp. coconut oil
  • 3 stalks curry leaves, (1 stalk for marinade/ 2 stalks for frying)
  • 1/2 cup coconut oil or enough to partially cover the fish **

Instructions
 

Step 1:

  • Wash and clean fish with lemon juice and salt.
  • Rinse with cold water. Use a napkin to dry off the water

Step 2:

  • Grind together all ingredients and 1 curry leaf stalk .
  • Marinate the fish with the mix.
  • Set aside for 10 to 30 minutes.

Step 3:

  • In a pan, add 1⁄2 cup coconut oil or enough to cover the fish halfway.
  • When the oil is hot, add the fish to the oil.
  • Put one curry leaf stalk on the top of the fish.
  • Turn down the heat to medium.
  • Cover the pan to avoid the oil splattering.
  • When the fish is cooked (it turns brown) on one side, flip the fish and put another stalk of curry leaf on top of the fish.
  • When both sides are cooked, remove from oil and place it on a plate lined with a paper towels to absorb oil.
  • Fried Fish is ready to serve.

Notes

This dish goes well with Rice, Biriyani, and Vegetable Fried Rice.
Fried fish can be served with lemon wedges, sliced onions, and tomato slices.
*You can also use Tilapia, Pomfret, Butterfish, or any other fish that is not soft.
**Use oil of your choice.
