Hakka Noodles with Chicken

Ingredients
  

  • 3⁄4 lbs. chicken thighs, thinly sliced (about 3 boneless thighs)

Step 1 (Marinade):

  • 1⁄2 tsp salt *
  • 1⁄2 tsp black pepper
  • 1⁄2 tsp kashmiri chili powder
  • 1 tsp soy sauce

Step 2 (Scrambled Eggs):

  • 2 eggs

Step 3 (Noodles):

  • 250 grams of Hakka noodles
  • 1 tsp salt
  • 1 tsp oil

Step 4:

  • 1 medium onions, sliced
  • 1 green chili, minced
  • 1 cup carrot, thinly sliced (julienne)
  • 1⁄2 green bell pepper, thinly sliced (julienne)
  • 1⁄2 red bell pepper or yellow bell pepper, thinly sliced (julienne)
  • 1⁄2 cup spring onion (scallions, white portion), diced
  • 1⁄2 cup spring onion (scallions, green portion), diced (for garnish)
  • 1 cup cabbage, thinly sliced (julienne)
  • 1 tbsp ginger, minced
  • 1 tbsp garlic, minced
  • 2 tbsp ketchup (or if unavailable, use tomato sauce)
  • 2 tbsp soy sauce
  • 1 tbsp chili sauce, red
  • 1 tsp chili sauce, green
  • 1 tsp vinegar
  • 1 tsp salt
  • 1 tsp sugar
  • 1⁄2 tsp black pepper
  • 2 tbsp Sesame oil (for frying)

Instructions
 

Step 1:

  • Marinate the sliced chicken with the above ingredients and set aside.
  • Fry the marinated chicken in 2 tablespoons of sesame oil or oil of your preference.
  • Set aside.

Step 2:

  • Use the remaining oil used for chicken and scramble two eggs and set them aside.

Step 3:

  • Boil water and add 1 teaspoon of salt.
  • Cook the noodles for 5 to 6 minutes or until they are firm.
  • Drain the water and rinse with cold water.
  • Sprinkle with a teaspoon of oil and toss well.
  • Set aside.

Step 4:

  • Add a tablespoon of oil to the pan and add ginger and garlic, sauté for a minute and add the green chili and onion.
  • Sauté for 1 minute.
  • Turn the flame to high.
  • Add vegetables (carrot, shallots (white part), bell peppers, and cabbage.)
  • Toss well for about 3 to 5 minutes.
  • Add the chicken and mix well.
  • Add the sauces (ketchup, soy sauce, chili sauce - red and green, and vinegar.)
  • Reduce flame to medium.
  • Toss in the scrambled eggs. Mix well.
  • Add the noodles and then add the salt, sugar, and black pepper.
  • Toss well and remove from heat.
  • Garnish with green onions.
  • Hakka Noodles with Chicken is ready to serve. Enjoy!
