Kappa Biriyani

Tapioca Biryani

Ingredients
  

Step 1:

  • 2 lbs. beef with bones (short ribs)
  • 1 tsp ginger, minced
  • 1 tsp garlic, minced
  • 1⁄2 tsp turmeric
  • 1⁄2 tsp black pepper
  • 1 tsp salt
  • 1⁄2 tsp chili powder (regular)
  • 2 tsp coriander powder
  • 1 tsp garam masala
  • 1 tsp vinegar
  • 1 medium onion, sliced
  • 1 stalk of curry leaves
  • 1 cup water or more, as needed

Step 2:

  • 2 lbs. tapioca (Kappa)
  • 1 tsp salt
  • 1⁄2 tsp turmeric
  • Water, enough to cover the tapioca and 2 inches above

Step 3:

  • 3 tbsps. coconut oil
  • 1 tbsp. ginger, minced
  • 1 tbsp. garlic, minced
  • 1 green chili, minced
  • 2 medium onions, sliced
  • 1 stalk of curry leaves
  • 1⁄2 tsp salt, or as needed
  • 1 cup water

Dry Spices:

  • 1 tsp kashmiri chili powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1⁄2 tsp black pepper
  • 1 tsp fennel seed powder

Instructions
 

Step 1:

  • Add all the above ingredients and combine well.
  • Add a cup of water.
  • Cook on the stovetop.*
  • Cook until the beef is cooked well, stir in-between.
  • Set aside

Step 2:

  • Cut the kappa into small pieces.**
  • Wash until the water runs clear.
  • In a pot, boil the water to cover the Kappa and about 2 inches above.
  • Add the salt and turmeric.
  • When the kappa is cooked well, drain the water.
  • Crush the kappa while hot - does not have to be too soft.
  • Set aside.

Step 3:

  • In a large pan, add the coconut oil.
  • When the oil is hot, add ginger and garlic.
  • Add the curry leaves and green chili.
  • Add the onions.
  • Add salt and mix well.
  • When the onions are slightly brown, reduce heat to low.
  • Add the dry spices and cook for 2 minutes.
  • Add in the cooked beef.
  • Add 1⁄2 cup of water or more, if needed.
  • Stir well.
  • On a medium flame, cook for about 3 to 5 minutes - keep the pot covered.
  • Taste for salt.
  • Do not let the gravy dry out.
  • Add the cooked kappa to the beef.
  • Combine well.
  • Remove from stove.
  • Kappa Biriyani is ready to serve.
  • Garnish with 1⁄2 teaspoon of coconut oil and curry leaves.

*You can use the pressure cooker if you prefer.
**You can use frozen tapioca if fresh tapioca is not available.
