Ingredients
  

  • 1 cup rice flour, roasted*
  • 3⁄4 cup coconut, grated
  • 3⁄4 cup jaggery or brown sugar **
  • 2 1⁄4 cups water
  • 1 tsp cumin powder
  • 1 tsp cardamom powder
  • 1 1⁄2 tsp oil or ghee
  • 1⁄2 tsp salt

Instructions
 

Step 1 (Preparing the Filling):

  • In a pan on medium heat, add 3⁄4 cup jaggery or brown sugar with 1⁄4 cup water and 1⁄2 teaspoon of ghee or oil.
  • Once the jaggery begins to bubble, add 3⁄4 cup of grated coconut. Mix well.
  • Add 1 teaspoon of cumin powder and 1 teaspoon of cardamom powder.
  • Keep mixing until the ingredients thicken and the water evaporates. Set aside.

Step 2 (Forming the Dough):

  • Roast the rice flour and set it aside.
  • Boil 2 cups of water and add 1 teaspoon ghee (or oil) and salt.
  • Add the boiling water into the rice flour and keep mixing to form a dough.
  • Keep it covered for 2 to 3 minutes.

Step 3 (Forming Kozhukkatta Balls):

  • Mix the dough well while it is warm and make small balls.
  • Spread a little water or oil on your palm. Take a ball of dough and in the palm of the hand, press the dough and stretch the edges to form a hollow space.
  • Stuff the space with the filling. Then carefully close the edges to form a closed ball.
  • In a steamer, add enough water to steam for 15-20 minutes
  • Grease with a light coat of oil or non-stick spray to the steel plate orthe steamer pan.
  • Place the Kozhukatta dough balls in the steamer pan. Cook for 10-15minutes.
  • Use a toothpick to pierce the Kozhukatta. If the toothpicks come outclean, they are done.
  • Kozhukatta is ready to serve. Enjoy!

*Rice flour can be used without roasting as well.
**The filling can be made without boiling the brown sugar or jaggery. Just add the cumin powder, cardamom, and the grated coconut to the brown sugar, jaggery, or white sugar and mix it well.
