Lemon Rice (Chitranna)

Ingredients
  

Step 1:

  • 1 cup Basmati rice, soaked in water for 20 - 30 minutes*

Step 2:

  • 3 tbsps oil
  • 1⁄2 tsp mustard seeds
  • 2 tsp Urad Dal (black split lentils)
  • 2 tsp Chana Dal (Bengal gram)
  • 2 tbsp peanuts, roasted
  • 2 red chilies, whole
  • 2 green chilies, cut and slit
  • 1 stalk of curry leaves
  • 1⁄2 tbsp ginger, chopped
  • 1⁄2 tsp turmeric powder
  • pinch of asafetida
  • Salt to taste
  • 1⁄2 tsp sugar
  • 2 tbsps lemon juice
  • coriander leaves, for garnishing

Instructions
 

Step 1:

  • Boil 6 cups of water.
  • Add 1 tablespoon and 1⁄2 teaspoon of salt.
  • Add the rice to the boiling water.
  • Cook for about 5 - 6 minutes or about 80% cooked.
  • Drain and set aside to cool.

Step 2:

  • Add oil to a pan.
  • Once the oil is hot, add mustard seeds.
  • When the mustard seeds pop, add urad dal and chana dal.
  • Roast until slightly brown.
  • Now add roasted peanuts, red chilies, green chilies, curry leaves and ginger - sauté well.
  • Add turmeric powder and a pinch of Asafetida.
  • Add sugar and lemon juice, salt to taste.
  • Mix well.
  • Add cooked rice.
  • Mix and sauté for about 2 to 3 minutes.
  • Remove from stove and garnish with coriander leaves.
  • Lemon Rice is ready to serve. Enjoy!
