Papaya with Grated Coconut

Ingredients
  

  • 3 cups papaya, grated
  • 1 tsp salt, to taste

Coarsely Grind

  • 1/2 cup coconut, grated
  • 2 green chillies
  • 2 cloves garlic
  • ½-inch piece ginger
  • 1/2 tsp cumin
  • 1/2 tsp turmeric

For Tempering

  • 2 Tbsp coconut (or vegetable) oil
  • 1/2 tsp mustard seed
  • 2 tsp urad dal
  • 2 red chillies, whole
  • 1 stalk curry leaves
  • 4 shallots (or 1 small onion) thinly sliced

Instructions
 

  • 1. Coarsely grind the ingredients in a food processor or a grinder.
  • 2. Set aside.

For Tempering

  • 3. In a pan, add 2 tablespoons of oil.
  • 4. When the oil is hot, add mustard seed.
  • 5. When the mustard seeds start popping, add the Urad dal and stir well.
  • 6. Add whole red chillies and curry leavess.
  • 7. Mix well.
  • 8. Add the onions and 1 teaspoon of salt.
  • 9. Sauté until slightly brown.
  • 10. Add the coconut mixture and sauté for a minute or two.
  • 11. Add the grated papaya and combine well.
  • 12. Keep stirring for 1 minute.
  • 13. Close the lid for 2-3 minutes.
  • 14. Open the lid and cook for 3-4 minutes –stir occasionally.
  • 15. Taste for salt and add more if needed.
  • 16. Papaya Thoran is ready to serve. Enjoy!
