  • 2 cups long grain rice * (Soak rice in water for 6 to 8 hours. You can use Basmati rice or Jasmine Rice)
  • 1 can (1-1/2cup) coconut milk
  • 1/2 cup grated coconut
  • 3 teaspoons sugar
  • Salt to taste
  • 1/2 cup cream of rice
  • 1 teaspoon dry yeast


Yeast Prep:

  • Add 1 tsp of yeast to 2 tbsp of warm water, and 1 tsp sugar.
  • Stir well.
  • Set aside for 10 to 15 minutes.

Cream of Rice:

  • In 1 cup of water, cook ½ cup of Cream of Rice until slightly thick.
  • Set aside.

For Palappam:

  • Grind the rice with coconut milk, grated coconut, and cooked Cream of Rice until the batter is smooth. If needed, add a little water.
  • Add the yeast at the end of the grinding process.
  • Pour out the batter in an oven-safe bowl. (Use a bowl that can accommodate the batter when it rises during fermentation, as the batter can double in size) and store it in a warm place.**
  • After fermentation, add 2 tsp of sugar and 1/2 tsp of salt in the fermented batter.
  • Mix well.
  • Heat the non-stick pan (Apachatty)*** on a medium flame.
  • Use a ladle and pour in half a cup of batter into the middle of the Appachatty and rotate the Appachatty to spread the batter around the pan.
  • Close the pan with lid and cook for about a minute or two.
  • The cooked Appam will slide off the Appachatty.
  • Palappam is ready to serve. Enjoy!



This dish goes well with Egg Curry, Chicken Curry, Vegetable Curry, or with milk and sugar.
*You can also use Basmati Rice or Jasmine Rice.
**(I normally turn the oven to 250° and turn off the oven before the batter is placed in the oven. It takes about 8 hours to ferment the batter).
***Appachatty- can be purchased in an Indian store, Amazon, or can be brought from India. You can always use a regular pan but will miss the thinness of the outer section of the Appam. However, the taste does not change.
