Parippu Curry

(Kerala Style Dal Fry)

Ingredients
  

  • 1 cup Split Moong Dhal (Yellow Lentil)
  • 3 cups water
  • 1 medium tomato, sliced
  • 1 small onion, sliced
  • 1 tsp salt, or add as needed
  • 1⁄2 tsp turmeric
  • 1⁄2 tsp Kashmiri chili
  • 1 green chili, chopped

Coconut Paste:

  • 1 cup coconut, grated
  • 2 green chilies, cut in half
  • 1 tsp cumin seed
  • 4 cloves garlic
  • 1⁄2 cup water

For Tempering:

  • 2 tbsp coconut oil *
  • 1⁄2 tsp mustard seeds
  • 2 dry red chilies, whole
  • 1 stalk of curry leaves
  • 1⁄4 cup onion, thinly sliced (or 4 shallots, thinly sliced)
  • 2 tbsp coconut, grated**

Instructions
 

  • Roast the dhal for about 5 minutes, let it cool, wash the dhal, and set aside.
  • In a pressure cooker, add the roasted dhal with the above ingredients and cook for 1 or 2 whistles or about 8 to 10 minutes.
  • Set aside.
  • The dhal should be well-cooked and soft when the lid is opened.
  • If you want a softer dhal curry, you can mash the dhal.
  • Grind the coconut paste ingredients into a fine paste and add to the dhal in the pressure cooker.
  • Wash out the grinding cup with one cup of water and add it to the pressure cooker. Add more water if you like.
  • Mix well and add salt to taste.
  • Return the pressure cooker to the stove without the lid and let the dhal simmer on medium heat.
  • Stir occasionally.
  • Cook until the first boil and turn off the stove.

For Tempering:

  • In a pan, add the oil.
  • When the oil is hot, add the mustard seeds.
  • When the mustard seeds pop, add the onions, the whole red chilies, and the curry leaves.
  • When the onions are slightly brown, add the grated coconut and stir well.
  • When the coconut is slightly brown, remove it from heat.
  • Add to the dhal curry and stir well.
  • Parippu Curry is ready to serve. Enjoy!

Notes

Parippu (Dhal) Curry goes well with Rice and Chapati. This can also be a wonderful soup, by itself.
*Ghee is preferred by many. You can use any available oil of your choice.
