Fried Pavakka

(Fried Bitter Gourd)

  • 2 bitter gourds (Pavakka)
  • 2 cups water
  • 1 tbsp vinegar
  • 2 tsps salt


  • 1⁄4 tsp turmeric
  • 1 tsp fennel seed powder
  • 1⁄2 tsp garam masala
  • 1 tbsp. Kashmiri chili powder
  • 1 tbsp. rice flour
  • 1 tbsp. corn starch
  • 1⁄2 tbsp lemon juice
  • 1 stalk of curry leaves, minced
  • 1 tsp salt
  • 1⁄2 tsp black pepper
  • Oil, enough to pan-fry


Step 1:

  • Cut the Pavakka into halves.
  • Remove the soft part from the center of the Pavakka.
  • Cut the Pavakka into thin slices.

Step 2:

  • Soak Pavakka in 2 cups of water (mixed with 1 tablespoon of vinegar and 2 teaspoons of salt.*
  • Soak for 10 minutes.
  • Rinse well.
  • Drain water.
  • Marinate with the above ingredients.
  • In a hot pan, add enough oil to pan-fry the slices of Pavakka.
  • When the oil is hot, fry the Pavakka slices until crispy on both sides.
  • Remove from oil.
  • Place on a paper towel-lined plate in order to absorb the excess oil.
  • Fried Pavakka is ready to serve.



*This step is optional. This step helps remove some of the bitterness of the bitter gourd.
