Pork Ularthiyathu

(Pork Stir Fry)

Ingredients
  

For Marinade:

  • 3 pounds of pork, cut into cubes
  • 1 tbsp. Kashmiri chili powder
  • 1 tsp black pepper
  • 1 tsp turmeric
  • 1 tbsp coriander powder
  • 1 tbsp garam masala
  • 1 tsp fennel seed powder
  • 1 tbsp ginger, minced
  • 1 tbsp garlic, minced
  • 1 medium onion, sliced
  • 1 stalk of curry leaves
  • 1 tbsp salt
  • 1 tbsp vinegar
  • 1 tbsp coconut oil

For Cooking:

  • 1⁄4 cup coconut oil *
  • 1⁄2 cup coconut, sliced**
  • 1 tsp mustard seed
  • 1 tbsp ginger, minced
  • 1 tbsp garlic, minced
  • 1 large red onion, sliced
  • 2 stalks of curry leaves
  • 2 green chilies, split
  • 1 tsp Kashmiri chili powder
  • 1⁄2 tsp turmeric
  • 1 tbsp coriander powder
  • 1 tsp black pepper
  • 1 tsp garam masala
  • 1 tsp fennel seed powder
  • 1 tbsp tablespoon vinegar

Instructions
 

  • Prior to Step 1, wash the pork with 1 tablespoon ofvinegar and 1 tablespoon of salt. Rinse well and drain well.

Step 1:

  • In a pan, combine all ingredients with the pork.
  • Mix well.
  • Set aside.

Step 2:

  • In a pan, add oil.
  • When the oil is hot, add the coconut slices.
  • When the coconut slices are slightly brown, remove and set aside.
  • Add mustard seeds to the remaining oil.
  • When the mustard seeds pop, add ginger and saute for a minute.
  • Add onion, garlic, green chilies and curry leaves.
  • When the onions are slightly brown, add all the dry spices.
  • Reduce heat to low.
  • Mix well.
  • Add the cooked pork and the fried coconut slices.
  • On medium heat, mix well and cook for 5 to 8 minutes, or until the spices are well mixed.
  • Pork Ularthiyathu is ready to serve. Enjoy!
