Vegetable Fried Rice

Ingredients
  

  • 1 cup of Basmati rice (soaked in water for about 20 to 30 minutes)
  • 4 whole cardamom
  • 5 cloves
  • 1⁄2 stick of cinnamon
  • 1 tbsp. of butter
  • 1 cup each diced carrots and peas, frozen or fresh
  • 1⁄2 medium onion, sliced
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1⁄2 small green chili, minced
  • 1⁄4 tsp turmeric
  • 1⁄4 tsp garam masala
  • 1⁄2 tsp salt
  • 1⁄2 cup of oil
  • 1 tsp lemon juice

For Garnish: *

  • 1⁄2 onion, sliced and fried for garnish
  • 1 tbsp. of coriander leaves

Instructions
 

  • Wash and drain the Basmati rice.
  • Boil 3 cups of water** with 1 teaspoon of lemon juice, whole cardamom, cloves, cinnamon, and 1⁄2 teaspoon of salt.
  • In a pan with 1 tablespoon of butter, stir in the Basmati rice and keep stirring for about 5 minutes.
  • Add the infused water into the Basmati through a sieve to remove the cardamom, cloves, and the cinnamon stick.
  • Let the rice reach a boil.
  • Turn heat down to medium.
  • Stir well and cook on medium heat for about 10 to 15 minutes.
  • In a pan, add 1⁄2 cup of oil and fry the onion slices for garnish.
  • Remove from pan and set aside.
  • In the same remaining oil, fry the vegetables (peas and carrots).
  • When the vegetables are cooked, drain, remove, and set aside.***
  • Take 3 tablespoons of oil from the remaining oil and add sliced onion. When slightly browned, add garlic paste ginger paste, and green chili.
  • Turn the heat down to low.
  • Add turmeric and garam masala.
  • Add the vegetables to the onion mix and stir well.
  • Add the cooked rice to the vegetables and combine well.
  • Garnish with fried onions and coriander leaves.
  • Vegetable Fried Rice is ready to serve. Enjoy!

**Amount of water varies with the type of rice used.
***You can have non-spicy vegetable rice if you stop at step 11 and go to step 16.
