Vegetable Korma

Ingredients
  

Step 1 (Tempering):

  • 3 tbsps. of oil *
  • 1⁄2 tsp mustard seeds
  • 1 bay leaf
  • 4 cardamon
  • 4 cloves
  • 1 small cinnamon stick
  • 1⁄2 tsp fennel seeds
  • 3 green chilies, cut in half and slit
  • 1 stalk curry leaves
  • 1 large onion, sliced
  • 1 tbsp ginger-garlic paste
  • 1 medium tomato, minced
  • 1 tsp salt

Step 2 (Dry Ingredients):

  • 1⁄2 tsp turmeric
  • 1 tsp kashmiri chili powder
  • 2 tsp coriander
  • 1⁄2 tsp cumin powder
  • 1⁄2 tsp garam masala

Step 3 (Vegetables):

  • 1 cup beans, diced
  • 1 cup carrot, diced
  • 1 cup cauliflower florets
  • 1 cup peas
  • 1 cup potatoes

Step 4 (Coconut Paste):

  • 1⁄2 cup coconut, grated
  • 1⁄2 cup cashews (10), soaked for 15 minutes
  • 2 tsp poppy seeds, soaked for 15 minutes
  • 1⁄2 tsp fennel seeds
  • 1⁄2 cup water, used to grind the coconut and paste ingredients

Step 5:

  • 1⁄2 cup coconut milk
  • 2 tbsps. coriander leaves, for garnishing

Instructions
 

Step 1:

  • In a pan, add 3 tablespoons of oil.
  • When hot, add mustard seeds - reduce heat to medium.
  • When the mustard seeds start to splutter, add cinnamon, cardamom, fennel seeds, cloves, green chilies, curry leaves and a bay leaf.
  • Stir for a minute - increase heat.
  • Add onions and let sauté until the onions are slightly brown.
  • Add the salt and garlic-ginger paste.
  • When slightly brown, turn down the heat.

Step 2:

  • Add the dry ingredients.
  • Sauté until the dry spices are well incorporated.
  • Add the minced tomatoes
  • Turn up the heat and stir well until the tomatoes are soft.

Step 3:

  • Add the vegetables and mix well for 2 minutes.
  • Add 2-1⁄2 cups of water.
  • Taste for salt and add more, if needed.
  • Close the lid and cook for about 15 minutes until the vegetables are cooked well.

Step 4:

  • Grind the Step 4 ingredients to make a paste - set aside.
  • Add the coconut paste and mix well.
  • Cook for another 4-5 minutes.

Step 5:

  • Add 1⁄2 cup coconut milk.
  • At the first boil, turn off the heat.
  • Add the coriander leaves for garnish
  • Vegetable Korma is ready to serve.

Vegetable Korma is a good accompaniment for Nan, Chapati, Parota, Rice etc.
